Do you ever get home from work and wonder what you are going to cook? Well, keep this little 5 minute wonder in your back pocket for one of “those ” days.

This is a vegetarian recipe, but its just as nice if you add some crispy bacon or chorizo. Serves 4.


375g Spaghetti, 100g rocket – finely shredded, 40g fresh basil leaves – finely chopped, zest of a lemon, juice of a lemon, 1 garlic clove – finely chopped, 1 red chilli – deseeded and finely chopped, 1 tsp chilli oil, 5 tbsp organic olive oil, 90g Parmesan cheese, grated finely.


  1. Bring to the boil a large saucepan of salted water, add the spaghetti and cook until al dente, drain and keep warm.
  2. Combine the rocket, basil, lemon zest, lemon juice, garlic, chilli oil, chilli and 50g of the Parmesan.
  3. Add the spaghetti to the sauce and mix well, season with salt and cracked black pepper.
  4. Serve immedietly in a large bowl topped with the remaining Parmesan cheese and a few extra basil leaves.
