Chorizo, Spinach & Feta muffins
Ingredients – makes 8
150g wholemeal flour
120g sour cream (or buttermilk)
50g self raising flour
4 tbsp olive oil
1 tsp baking powder
100g feta cheese
50g chorizo, skinned and chopped into small pieces
50g fresh baby spinach, roughly chopped
half cup chopped fresh herbs- parsley, dill, finely chopped
salt and black cracked pepper
Preheat oven to 180C /160C fan forced
Mix all the ingredients together and place into a silicon muffin tin (or line muffin tin with paper)
Cook for 25-30 minutes
Serve warm or cold with a green salad.
In the photo l have served the muffin on a slice of roasted pumpkin.
Note: you can replace the chorizo with walnuts and red pepper finely chopped to make it a vegetarian option.
