Opi’s Birthday Bash

Last weekend it was Opi’s 2nd birthday and it seemed like a great excuse to invite some of her friends up for a drink by the fire. Those friends are special because they still love her after having either lost one of their socks, maybe a shoe or inner sole and if they stayed over, there is a sure chance they had a rude awakening ( dive bombed from a distance).

A few of you have asked for the pooch cake recipe, so here it is. This cake is easy, full of delicious ingredients that your fur baby will love. Of course, one small slice is enough and because it’s full of carrot, it lasts for the good part of a week in an air tight container. Be sure to share with the other furry friends in the hood!

Cake Recipe

Ingredients 

2 eggs

1/2 cup  peanut butter, pure smooth, organic

1/4 cup vegetable oil

2/3 cup water

1/3 cup honey

2 1/2 cups grated carrot

2 cups wholemeal flour

2 tsp baking powder

Method

  • Grease and line 2 x 20cm round cake tins.
  • Preheat oven to 180C.
  • In a large mixing bowl, whisk gently together all the wet ingredients, then fold in the carrots, flour and baking powder.
  • Divide the mixture between the two cake tins.
  • Bake for 25-30 minutes.
  • Leave the cakes to cool in the tins.
  • Decorate and remember the candles.

I made a potato frosting – 600g potatoes, peeled, cooked, mashed and mixed with 1/2 cup Greek yoghurt. I garnished the top of the cake with slices of carrot and radish.

Waiting patiently for a slice of cake and when the party and excitement was over, we had a peaceful deep belly sleep.
