Gressins au chocolat
250g SR flour
75g butter, melted
2 tbsp fresh lime juice
2 tbsp lime zest
1 dash vanilla extrait
1 egg yolk
120g milk chocolate, melted for decoration
Preheat oven to 170C, prepare two baking trays with parchment paper.
Mix all the above ingredients together ( except the chocolate) in a mixer until you have a a smooth dough.
On a lightly floured work surface, roll each gressins to 12cm long and place on the prepared trays.
Cook for 10 minutes or until firm to touch, leave to cool on the tray.
Meanwhile melt the chocolate and drizzle lightly over the cooled gressini with a teaspoon, let set.
Serve with coffee and see the smiles.
Note- these can be stored in an airtight container for up to 2 days or in the freezer for 6 weeks.
