A seriously great Sunday evening soup, the snow if falling, wind howling, rain pelting down the window, it doesn’t matter, this soup is going to make you warm inside. A big orange bowl of warmth, served with home made bread (see my cheats soda bread blog) and a slab of tasty cheese. It’s healthy, it’s cheap. it’s easy and whats even better is it’s amazing!
Ingredients
700g pumpkin, cut into 2 cm cubes,deseeded and skinned
2 Apples, chopped roughly with skin, no seeds
2 onions, skinned and chopped roughly
2 garlic cloves
2 tsp curry powder
2 tbsp butter
600ml chicken or vegetable stock
250ml milk or cream
Salt and pepper to season
nutmeg to serve
Method
- In a medium saucepan, cook the onions in butter until soft.
- Add the pumpkin, curry powder, apples, garlic and vegetable stock (or chicken stock) to the onions.
- Cook until the pumpkin is tender, about 25 minutes, blend with a soup wand until smooth, add cream or milk until you have the desired consistency, season to taste.
- Serve with a splash of cream & sprinkle of nutmeg on top.
