Spiced apple & walnut cake
5 large cooking apples 1 cup brown sugar
1 cup plain flour
1 tsp cinnamon
1 tsp nutmeg
1/2 cup sunflower oil 1 tsp baking powder 1/3 cup walnuts
1/2 cup sultanas
1. Prepare a loaf tin with baking paper. Preheat the oven to 140C.
2. Peel and chop the apples into small chunks, mix with the sugar and leave to stand 15
3. Add to the apples the flour, cinnamon, nutmeg, oil, beaten egg, sultanas, walnuts and baking
powder and mix gently.
4. Pour into a loaf tin and bake for one and half hours, or until a skewer comes out clean. 5. Serve warm with creme fraiche mixed with a little brown sugar.
