Do you ever get home from work and wonder what you are going to cook? Well, keep this little 5 minute wonder in your back pocket for one of “those ” days.
This is a vegetarian recipe, but its just as nice if you add some crispy bacon or chorizo. Serves 4.
375g Spaghetti, 100g rocket – finely shredded, 40g fresh basil leaves – finely chopped, zest of a lemon, juice of a lemon, 1 garlic clove – finely chopped, 1 red chilli – deseeded and finely chopped, 1 tsp chilli oil, 5 tbsp organic olive oil, 90g Parmesan cheese, grated finely.
- Bring to the boil a large saucepan of salted water, add the spaghetti and cook until al dente, drain and keep warm.
- Combine the rocket, basil, lemon zest, lemon juice, garlic, chilli oil, chilli and 50g of the Parmesan.
- Add the spaghetti to the sauce and mix well, season with salt and cracked black pepper.
- Serve immedietly in a large bowl topped with the remaining Parmesan cheese and a few extra basil leaves.
